We purchase buckwheat noodles directly from contracted farmers and mill them in-house. We grind the buckwheat flour to be used that day on a millstone in the morning and make the soba noodles. The soup is made from dried bonito flakes and flavored with soy sauce and sake, and no additives are used. We use locally produced and locally consumed ingredients as much as possible. We do our best to make our customers happy!
