Bonopork Gifu, the pork used in Butamichi's famous shabu-shabu, is produced by three farmers in Mizunami City, Yamagata City, and Ibigawa Town in Gifu Prefecture, and Tokyo Butamichi uses only Mizunami Bonopork from these three farms. The meat is slaughtered, deboned, shaped, and cut at the Seki-City Meat Center "Chuno Meat Cooperative Association" in Gifu Prefecture, and is sent to "Tokyo Butamichi" every day.
Pork is sliced by a meat slicer used in meat stores for each customer order. It is the style of "Tokyo Butamichi" to have freshly sliced meat.
